Happy New Year's 2012

HAPPY NEW YEAR!!!! I hope everyone had a happy and safe New Year. Jon and I headed to our friends house up north for the night. We had planned to make about eight appetizers each  so that we could have one an hour or really two an hour. I was up early on Saturday running around trying to get all things finished up for us to head up north. Jon was at work until 1pm so I have about 5-6 hours to get all of my things ready to go. It was definitely not enough time. I made about half of my appetizers at home and the other half we had to bring to make there.

Once we got there the party started with the first course of appetizers. Earlier that week Jon and our friend Christina thought that it would be a neat idea to have a Chopped Challenge between Jeff and I. I thought it would be fun as well... I was really nervous but all last week they aired a ton of Chopped Shows so I was pretty prepared.

And a little later that night the mystery ingredients were revealed. BEER, FROZEN SPINACH, PICKLED SWEET BEETS AND MARSHMALLOWS....  I just kept thinking really marshmallows and pickled beets. I had at first no clue what to make with it... we had an hour to complete the challenge. My mind was racing a mile a minute. the challenge started and we were off. Both of us running around the kitchen pots and pans being hurried onto the stove. Chopping of ingredients were happening so fast. We both used chicken as the main meat. I ended up making a garlicky and carmel spread crostini  topped with sautéed spinach in beer cooked with beets and shredded chicken marinated in beet juice. Not really sure how to describe it but that is what I made.

We had made two plates and the judges ate and deliberated on who was the champion and when Jeff and I were able to come back to hear the results... and I WON!!!! I really cannot believe it. Jeff is the best chef I know and I just kept thinking no he's was way better than mine. Thanks Jeff for being such a good sport. I think that we are definitely doing this again... It was so much fun. The night was coming to an end and then the clock struck midnight... HAPPY NEW YEAR! I am hoping for a lot of changes in myself. I have started to de-clutter my house in a resolution to only have things that we really need. So far I have been abel to keep it up. I ended up cleaning out one of our cabinets and the pantry (again I know but this time it will stay clean.) I know have empty shelves which is a great feeling. What did you do for the New Year?
