last night's dinner: 10/29

Recipe: Lasagna Soup
Serves 8. Cook time about 1 hour
1 Pound Ground Pork
1/2 Cup Diced Onion
1 Green Pepper, Diced
4 Cloves Garlic, Minced
32 Ounces Chicken Broth
1 Can (14.5oz) Diced Tomatoes
1 Can (15oz) Tomato Sauce
1 Tablespoon Italian Seasoning
1 Teaspoon Garlic Salt
1/2 – 1 Teaspoon Salt (to taste)
1/4 Teaspoon Black Pepper
1/2 Teaspoon Crushed Red Pepper (less if you don’t like spicy)
1 Teaspoon Dried Basil
8 Lasagna Noodles OR 1-1 1/2 Cups Noodle of your Choice (1 1/2 cups dried)
1 Cup Parmesan Cheese, Grated
1/2 Cup Mozzarella Cheese Shredded
Brown ground pork in a large pot. Drain if desired, otherwise add onion, green pepper and garlic and saute in meat until tender.
Add chicken broth, tomatoes, tomato sauce and seasonings to pork and tender veggies.
Bring to a boil for about 2 minutes and then reduce heat to a covered simmer, stirring occasionally, for about 30 minutes.
While soup simmers bring a medium pot of water to a boil and cook pasta. (I ended up using small ravioli instead of pasta.) Drain pasta and set aside.
Once soup has simmered and you are ready to serve, add cooked noodles and stir. You can add them all-or you can add them to order. I would recommend adding them just as you’re serving because they get pretty soft if they sit in the leftover soup for too long. I like my noodles to be very al dente-if you like them softer then add them all at once.
Stir in noodles, top with a layer of mozzarella and parmesan cheese. Serve with bread and enjoy!
NOTE: You can place soup in an oven-safe bowl and place under broiler if you want to get a nice brown crust on the cheese!

over the weekend: 10/26 - 10/27

What a great weekend! It was great to wake up on Saturday morning and see Jon still there... Jase and I were quite busy cleaning the house our normal Saturdays. Jon headed up north to pick up his motor that he has been waiting for months for. We celebrated our neighbors birthday Saturday night. Sunday was pretty quite. Woke up later than normal which was nice. Jase was chatty the whole day. Started on my food photography again. More to come tomorrow. Jon had told me that if I wanted to get noticed for my photography was to go back to shooting food. When I did photos of food and blogged about it I had a ton of views. So I took Jon's advice and I am starting back up again. I am excited to get back into it again.

Happy Friday! I am going to try something new with my blog this year. Well this year is almost over so we shall see how this goes until the end of the year. I can handle this for about 2 1/2 months right?

I am pretty much obsessed with Urban Outlet Inc. Each day they post cute cardigans, leggings and shoes that I want... This could be trouble...

I signed Jase up to receive monthly packages from Citrus Lane. This website send you a box of suprises each month for you child. I think right now that it is more exciting for me than Jase..

Time to upgrade my Fitbit to the FORCE.

Started to work on my own photography business.

weekend rewind

This past weekend was so crazy busy that I cant believe that it flew by. I took off on 10/18 to spend with Jase on the day that Jon and I met over 11 yrs ago. Man, how the time flies. Just thinking about how our first date at restaurant that we spent over three hours at getting to know each other. Fast forward to today and we have a little baby together. Also, Jon starting a new job which is awesome. I think that is a great move for him and our family. Happy Wednesday!

dear jase...

I love that every morning I go into your room and see you seeing peacefully in your crib. Then just as I sneak out you wake up. I lean over to say good morning and I see a HUGE smile on your face. No cares in the world, every day is a clean slate. I must say I think I can learn from you. Hopefully the weather holds up for us to head to a pumpkin patch and take some family photos.

dear jase...

dear jase,
As you sleep peacefully in your swing I stare at you thinking where has the time flown by. It feels like yesterday that we were just bringing you home from the hospital. You make me so happy to be you mom. Every time that you smile I get so excited that you can finally see me. Your papa thinks that I am silly for getting so excited over it but I cannot help myself. That smile makes my day for when I have a bad day I know I get to come home to that smile.
